• The chef, Patrick Gublin, comes from a farming background. At a very early age, his mother, who was an excellent cook passed on a taste for delicious home-cooked meals and taught him in particular how to select the best vegetables and the most aromatic herbs to accompany and enhance any culinary dish.
He grew up in a region renowned for its fresh and authentic produce. He sank his teeth into tasty fruit fresh from the orchard.
This, then, is in his genes and he cooks using only market produce selected with the greatest of care.

| However, he came to cooking relatively late, after having trained as a waiter and sommelier (a wine steward). He has worked in Paris and abroad, working in several Michelin star establishments along the way. He is also passionate about Grands Vins, which are to be found on his wine menu alongside champagnes from southern Champagne which have pride of place, and of course the famous Rosé des Riceys. |

The chef maintains a close relationship with his suppliers, whether from Rungis or the local area..
• Indeed, the Andouillette de Troyes on his menu is sourced from Thierry, an artisan pork butcher whose reputation is second to none in the region.
• The Charolais beef he buys is reared in the luscious green pastures of Champagne.
• Local to this beautiful region, the Chaource cheese sits imposingly on its board surrounded by the best cheeses France produces.
We could mention the way he simmers the young pigeon with its fricassee of mushrooms from the Forêt d'Orient, his fabulous roast turbot or his angoustine with green asparagus in passion fruit vinaigrette...
But even better would be to come and enjoy his beautifully presented creations for yourself. Tableaux for the eating ! His constant watchword, and that of his kitchen colleagues : " It’s the produce that counts above everything! "
